This Black Gram Khichdi is an Ayurvedic recipe which is potentially a body strengthening food item. This khichdi is prepared by roasting Black Gram and boiling it with Rice. Then it is seasoned.

This Khichdi is beneficial for adults as well as children,This dish takes some five minutes more of time than it does to cook plain rice. Plain dal,Charu (seasoned tamarind water), pachadi (Chutney), or just bland and thin buttermilk (chaanch) can be an excellent accompaniment to this Ayurvedic Black gram Khichdi. Tips

Black Gram:

• We definitely need to use only unpolished Black Gram with husk. That ensures the presence of rich fibre in the dish. In addition this contributes to the rich flavour and wonderful taste of the Khichdi.

• I have used the split variety of Black Gram Dal with husk. You could use the un-split, whole variety of the Gram as well. Just remember to increase the amount of water by some half a cup if you are using the whole Gram.

Rice:

• If you opt to cook the rice in the cooker, there is no need to soak the rice. You can cook it straight along with the Black Gram in the cooker

• Since we are using the Black Gram with husk, there is no need to use Brown Rice. That will be too much of Protein. It may be difficult for the elderly people to digest it.

Fenugreek (Methi) seeds:

• The use of Fenugreek has many health benefits. Elderly people and people with Hormonal Imbalance should certainly try to include Fenugreek in their diets. If this dish is being made only for children you may avoid the Fenugreek. Children may not relish the pungent taste of Fenugreek.

Seasoning:

• If you are looking for a healthy cooking medium, do use Cold Pressed Gingelly Oil (Kachi ghani Til ka Tel). This is an excellent option. Gingelly Oil has the potential for balancing the Hormones in the human body.

• I have used Green Chilli in my recipe as it is suitable to eat with different combinations. You may use Peppercorns instead. .However, Peppercorns may not be very good to eat if you are eating the Khichdi with Pachadi (Chutney); though it may be fine to use peppercorns when you are eating it with dal or Buttermilk. .

Garlic:

• Garlic is very beneficial for health when taken in sufficient quantity. You may omit garlic if you do not like it.

Fresh Coconut:

• Fresh Coconut is purely optional. Use it if you relish the sweetness of coconut; or else omit it altogether.

Ingredients

  • 1/2 Cup Black Gram (with husk)
  • 1 Cup Rice
  • Salt (As Per taste)
  • 5-6 Garlic Pods
  • 1 tbsp Fenugreek (Methi) Seeds
  • 3 Cups Water
  • 1/2 Cup Fresh Coconut (Grated)
  • For the Seasoning:
  • 1 tbsp Gingelly (Til) Oil
  • 2 Green Chiili (slit lengthwise)
  • 1 tbsp Cumin (Zeera)
  • Curry Leaves (a few)

Instructions

  1. Roast the Black Gram on a low flame, stirring it all the time, until it starts to waft a wonderful flavour. The authentic flavour of the Khichdi depends on how well you roast the Gram.
  2. Put the washed rice, roasted Gram, and all other ingredients in the Pressure Cooker and cook until 4 whistles come. Put the flame off. If you are using whole Black Gram you will need to let the mixture cook for a little more time.
  3. Heat a little oil in the seasoning pan and fry all the items of seasoning. Fry well till brown and add to the Pulagam (Khichdi). Finally mix the freshly grated Coconut.
  4. The Black Gram Pulagam (Khichdi) is delicious to eat whether hot or cold.
