Diamond Nimki | Crispy Nimki Tea Time Snacks Recipe | Namak Pare - Diamond chips are an ideal snack along with hot Tea or for any special get-togethers. It is also called Namak Para. In Telugu states, they are usually called Diamond chips.

Once you start eating, you can hardly stop and feel like having more and more as they are tasty and crispy to eat.

Diamond chips recipe is very simple but depends on the way you mix the dough and frying. Please follow the tips to get perfect results.

Tips

  1. We normally make NamakPara/Diamond chips with plain Maida Flour, but you can use Wheat Flour also.

2.Dough should be hard enough, because the dough tends to become very soft after getting soaked.

  1. Spread the Roti very thin so that the chips will be crispier and tasty

  2. Use powdered flour to make Roti thin

  3. When you cut the chips using a knife, you can remove them easily from the surface

Dalda/Ghee

  1. To get crispy Diamond chips ,Use more Dalda or Ghee

For Frying:

  1. Fry the chips on a high flame till they turn golden brown. Immediately, put them in a strainer. They become crispy when they cool down.

Ingredients

  • 250 gms Maida flour
  • 1/4 cup Rice flour
  • 1 tsp Carom seeds
  • Salt
  • 60 ml Melted Dalda / Ghee
  • Sufficient water
  • Oil for frying

Instructions

  1. Add Rice flour, Carom seeds, Salt, Dalda to the plain flour and mix well.
  2. Make a soft dough using sufficient water. Keep it aside for 30 minutes.
  3. Spread the dough into a thin Chapathi using powdered flour.
  4. Sprinkle some powdered flour on the top of it and cut it into diamond shapes using a knife. Remove the diamonds from the surface.
  5. Place them in a strainer and remove the excess flour from the diamonds.
  6. Fry the diamonds in hot oil on a high flame till they turn golden brown. Place them in a strainer and leave it for 2-3 hours.
  7. Store them in an air-tight container after 3 hours. They remain fresh for 15 days.
