Before you bake the cake, please follow these tips:

  1. For this cake, take milk, curds, sugar and semolina, all in equal measure.

What kind of ingredients to use?

  1. None of the ingredients should be cold or from the fridge. They should all be at normal, room temperature.

What is semolina?

  1. Semolina is coarsely ground, tiny flakes. It is commonly called Bombay Rava or Upma rava.

  2. Milk powder adds a nice, yummy taste to the cake.

  3. If you sieve tutti-frutti pieces along with the flour, then the tutti-frutti will not go and settle at the bottom of the pan when the cake is baking.

A few things about Sugar:

  1. I use the refined sugar usually used for baking. It melts quickly. If you don’t have refined sugar you can just powder some regular sugar and use it too.

  2. You could use brown sugar.

  3. After adding semolina, you should mix it only in the cut-and-fold method. If you just mix it around, cake will not rise well.

What are the reasons for the cake not rising?

  1. You should only use fresh baking soda and baking powder, if the baking soda is stale, the cake will not rise.

  2. When the mixture is put in the cake tin, the mixture has to be filled to 3/4th of the container. If it is any lesser than that, the cake does not rise. And if it is more than that, the cake will rise and spill out. Or the cake will rise and the middle part will sink in.

  3. If you are baking in an oven, it must be pre-heated in convection mode for 10 minutes and then baked in the middle rack.

  4. Timing the baking of the cake always depends upon the capacity of your oven. So always poke a toothpick into the cake and bake until it comes out clean.

How to bake in a cooker?

  1. Those who bake in a cooker or a deep pan, should put the cooker on the stove, cover it with an opening for steam to get out and preheat on high flame for 10 minutes. Then put a stand inside the preheated cooker, place he cake tin and bake for 40 minutes or until a toothpick comes out clean. It is only then we can say the cake is perfectly baked.

  2. If the heat is getting out of the cooker/Pan, then it takes longer for the cake to bake. If it is losing too much heat, it not only takes longer but the bottom of the cake may burn too.

  3. When the cake is fully baked, leave it in the tin for 10 minutes, then unmold it, cover it with a paper napkin and let it cool fully. This prevents from a moist layer forming on the top of the cake.
