I feel this Green Dum Biryani is better than Hyderabadi Dum Biryani as the spices are not as strong as in the Hyderabadi Biryani. It is easy on the stomach. And the Mint paste we add to the Rice gives a very special taste and aroma.

Green Biryani is also made almost the same way as Hyderabadi Dum Biryani but the measurements are different. Even Green Chick Biryani also tastes good. I will share that some other time. Do make this Green Veg Biryani to turn special days into even more special ones.

Tips

Rice:

  1. I have used Basmati Rice. You could use any other Rice but when you Dum the Rice, remember to use 1/4th Cup more Water than you use for Basmati.

  2. Biryani always tastes better with a good brand of Basmati Rice. In case you buy loose Rice, you should use Rice that is older than a year. Only then will the grains stay non-sticky.

  3. Any Rice that you may use, should be soaked for an hour.

To prevent Biryani from sticking to the bottom:

  1. Biryani will not crust in the bottom if you take a thick-bottomed vessel. In case you do not have such vessels, please use a pressure cooker. It has a thick gauge.

  2. whichever vessel you use, put the vessel on a plain Tava while doing Dum. But you need to Dum the Rice for a longer time than normal. That is to say, if I suggest that you have to Dum for 10 minutes, you need to understand it as 15 minutes. When you keep the vessel on a pan, the Rice won't burn and stick to the bottom.

Green Paste:

  1. Green Paste can be a paste of Mint, Green Coriander and Green Chillies and sometimes even some Spinach. I do not like Spinach with Biryani but you could use it, if you like.

Oil – Ghee:

  1. Oil and Ghee should be adequate or the Biryani will seem too dry. Biryani

Some more points:

  1. You could use Capsicum, Mushroom and Paneer to Biryani but I didn't..

  2. I have used frozen Peas so I added them at the very end. If you use fresh Peas, you should fry them with the rest of the vegetables.

Ingredients

  • For Green Paste
  • 50 gm Green Coriander
  • 50 gm Mint
  • 4 - 5 Green Chillies
  • 1/2 Inch Ginger
  • 6 - 7 Garlic
  • 1/2 cup Curd
  • 1 tbsp Lemon Juice
  • For Biryani
  • 2 tbsp OIl
  • 2 tbsp Ghee
  • Biryani Spices
  • 1/2 tsp Pepper
  • 1 tsp Black Cumin
  • 1.5 Inch Cinnamon
  • 6 Cardamoms
  • 5 Cloves
  • 1 Black Cardamom
  • 1 Nutmeg
  • 1 Nutmeg
  • 1 Kapok Buds
  • 1 Biryani Leaf
  • Vegetables
  • 1 Chopped Onion
  • 1/4 cup Potato
  • 15 - 20 Cauliflower pieces
  • 4 French Beans
  • 1/2 cup Carrot pieces
  • Salt – To taste
  • 1 tbsp Ginger Garlic paste
  • Dry spices
  • 1/2 tsp Turmeirc
  • 1 tsp Cardamom Powder
  • 1 tsp Garam Masala
  • 1.5 tsp Mirchi Powder
  • 1/2 tsp Pepper Powder
  • 1 tsp Coriander Powder
  • 1 tsp Roasted Cumin Powder
  • 1/2 cup Peas
  • 1/2 cup Curd
  • 1 tsp Lemon Juice
  • To cook Biryani Rice
  • 2 liter Water
  • 2 Green Chillies
  • 2.5 tbsp Salt
  • 5 Cloves
  • 1 Biryani leaf
  • 1 tbsp Black Cumin
  • 6 Cardamoms
  • 1 Kapok bud
  • 1 Nutmeg
  • 1.5 Cinnamon
  • 2 cups Soaked Basmati Rice (370 gm)
  • 1 tsp Kesar food colour
  • 1/4 tsp Garam Masala
  • 2 tsp Ghee

Instructions

  1. Add all the ingredients for the Green Paste and make a smooth paste with cool water.
  2. Add Ghee and Oil to the vessel and heat it. Add the dry Biryani spices and roast.
  3. In the spices, add the Onions and fry until they turn soft. Then add the rest of the vegetables and fry till they are cooked to 60%.
  4. In the fried vegetables, add Salt and the rest of the dry masalas and then switch off the stove.
  5. After the stove is switched off, add the Green Paste, frozen Peas, Curd, Lime juice, a tbsp Ghee and Oil and mix well.
  6. To cook Biryani Rice, add all the spices and Salt in boiling Water and boil for another 3-4 minutes.
  7. In the boiling Water, add the soaked Rice and cook to 80 % in a high flame.
  8. Strain the 80% cooked Rice and spread it on the vegetables coated with spices.
  9. After spreading the Rice, add some Garam Masala and Ghee and add water from the cooked Biryani Rice and spread it all over the Rice. Add some Orange food colour as well.
  10. Seal the edges of the vessel with Maida paste, leaving one spot from where steam can escape. Cover the vessel so that the Dum does not go out.
  11. On high flame, the steam comes out of the spot left open. Then reduce the flame and cook for 8 minutes. Then switch off the stove and let it rest for 20 minutes.
  12. Then uncover the aromatic Green Biryani and serve with cool Raita.
