The Rice mixed with Drumstick leaves, Coriander, Sesame and Red Chillies is not only tasty to eat but also healthy and light on the stomach.

Drumstick leaves have high nutritional value and many benefits for Diabetics, help in improvement in eyesight and also rectify Vitamin deficiency.These Drumstick leaves can be used in powder form, added to Dal, Rasam or Curry. It can also be eaten along with Roti. It can be replaced with ordinary spice powder for Idli and Dosa to stay healthy.

This simple Drumstick Leaf Rice is ideal for tiffin boxes and also perfect for using left over rice. It gets digested well.

Tips

Rice :

1.Brown Rice or Millets also can be used instead of White rice.

Drumstick Leaves Powder:

  1. Pluck the leaves, wash them and dry them in shade.

  2. You can use a little Tamarind if you like the tangy taste, but I haven't used it. Lemon can also be used as per taste. Jaggery also can be added while grinding the powder.

  3. I used only one Red chilli and used Pepper powder at the end to balance, but you can use more Red chillies, if you like.

  4. You can always store some Drumstick leaves powder and make this instantly.

Seasoning:

1.Use Chillies soaked in Buttermilk instead of Red chillies and Groundnuts instead of Cashews.

Ingredients

  • For making Drumstick powder
  • 1 tbsp Coriander seeds
  • 1 tbsp Sesame seeds
  • 1 Red Chillies
  • 1 tsp Cumin
  • 5 Garlic pods
  • 50 gm Drumstick leaves
  • For Seasoning
  • 2 tbsp Oil
  • 1 tsp Mustard Seeds
  • 2 Red Chilli
  • 1 tsp Bengal gram
  • 1 tsp Black gram
  • 10 Cashews
  • 4 Grounded Garlic
  • Salt
  • 1/4 cup Cooked and separated rice (1 cup = 185 grams)
  • 1 tsp Pepper powder

Instructions

  1. Heat some oil in a pan and add all the ingredients used for seasoning and wait till you get a good aroma.
  2. Add Drumstick leaves to it and fry on a medium flame till the moisture evaporates. Then add Garlic to it and fry.
  3. Grind this into a fine powder in a mixie.
  4. Heat Oil in a pan, add the remaining ingredients used for seasoning, cooked Rice and the Drumstick powder and toss it on a high flame for some time.
  5. Add Pepper powder, mix well and remove it from the fire and serve hot.
