I have seen Rava Kheer made most often in Tamil Nadu. In Tamil Nadu, They also make it as an accompaniment to Thali meals. I have not seen this recipe much in Telugu states. It looks good and is easy to make, and the taste is enticingly different.

Tips

Chironji: I have added Chironji for great taste. In case you do not have them, you could use any other dry fruits. If you are using Chironji, soak them for 30 minutes before you add them to the Milk. Then they will cook nicely.

Saffron: Saffron adds good fragrance and colour but drops it if you don't have it.

Ingredients

  • 1/4 cup Bombay Rava (60 gm)
  • 1/3 cup Sugar (80 gm)
  • 1/2 cup Water (120 ml)
  • 1/4 cup Cashew Nuts
  • 1/4 cup Ghee
  • 1/2 liter Milk
  • Saffron – a pinch
  • 3 tbsp Chironji Seeds (Soaked for 30 minutes)
  • 1/2 tsp Cardamoms
  • 1/4 pinch Edible Camphor

Instructions

  1. Melt Ghee and roast Cashew Nuts until they turn golden.
  2. Add Semolina/Rava to the same Ghee and roast on a low flame. When it is roasted, add Water and cook until soft and Ghee separates.
  3. When Ghee separates, add Milk and mix well so that there are no lumps.
  4. Once Rava is dissolved in the Milk, add Chironji. Mix and cook for 10-12 minutes or until the mixture thickens.
  5. Once the Kheer begins to thick, add Sugar, Saffron, Cardamom Powder and Cashew Nuts, mix well. If you like, add a pinch of edible camphor.
