“Coconut Vadas” is a Telangana special recipe that gets done within minutes. Andhras call them Chakkalu and Tamils Tattayi. Entire South India has this recipe, but each place has its variation.

The Telangana style Coconut Vadas do not stay fresh for a long time like the Andhra Chakkalu or even like those with Groundnuts made in Telangana. They are soft and make for perfect evening snacks.

Tips

  1. These Vadas are not hard. They are crunchy on the outside and a little soft and puffy on the inside. As they cool down, they become softer. And they stay fresh for 2-3 days.

  2. The dough has to be hard. Then the vadas will absorb lesser Oil. Or they soak up a lot of Oil.

Ingredients

  • 1 cup Rice Flour
  • 1/2 cup Raw Coconut Grated
  • 1/2 Inch Ginger
  • 1 tsp Cumin Seeds
  • 4 Green Chillies
  • Salt
  • Hot Water - as needed
  • Oil to fry

Instructions

  1. Add Ginger Green Chillies and Cumin Seeds to a mixie and grind to a smooth paste.
  2. Boil ¾ of Water.
  3. Add grated Coconut, Salt and Ginger paste to the Rice Flour and mix well.
  4. Add hot water slowly, mix with a spoon first and then knead with hands into a tight dough like Puri dough.
  5. Put 2-3 drops of Oil on a polythene sheet, wet your hand with oil, and roll the dough flatly like Chakkalu. This can be done even in a press by placing the dough on an Oily polythene sheet.
  6. Fry the rolled flat sheets in hot Oil and set them aside.
  7. These stay fresh for at least 2-3 days.
