White Chitrannam | Karnataka Style Sabsige Soppu Chitranna

This Karnataka Special White Rice is an excellent lunchbox recipe which is made with simple ingredients like Coconut and Dill leaves. Soppu means Dill or Soya leaves in Kannada.

This has a nice Coconut taste and good fragrance of Dill leaves and has an authentic taste of a traditional recipe from a southern state.

It hardly takes five minutes to make this Rice if all the ingredients are ready. If you are in a hurry, this recipe comes as a great quick solution for the lunch box. It has all the ingredients good for the stomach.

Generally, all the Rice recipes have too much spice, Ginger Garlic paste etc So, I prefer this Rice which has no masalas, is healthy as well as tasty to eat.

Tips

Dill Leaves:

  1. These leaves have a natural fragrance even if a few are used. Roast the leaves for 2 to 3 minutes to remove the raw smell and bring out the taste.

Other tips :

  1. In case Dill leaves are not available, you can use chopped Fenugreek Leaves, Spinach Leaves or Amarnathus Leaves.

  2. Onion is optional.

Ingredients

  • 1 cup Rice - separately grained (185 grams)
  • 4 tbsps Oil
  • 1 tsp Mustard
  • 1 tsp Cumin
  • 1 tbsp Raw Bengal Gram
  • 1 tbsp Black Gram
  • 1/2 tsp Pepper
  • 3 Slit Green Chillies
  • 2 Red Chillies
  • 1/2 cup Chopped Onions
  • Salt
  • 12 - 15 Cashew Nuts
  • 3 tbsp Peanuts
  • 1 cup Grated Coconut
  • 1 tbsp Lemon Juice
  • 1/3 cup Chopped Dill Leaves

Instructions

  1. Heat some Oil in a pan, fry Cashews and Peanuts till they turn golden brown. Remove from the Oil and keep them aside.
  2. In the same Oil, put Mustard, Cumin, Bengal Gram, Black Gram, Pepper, Red Chilli pieces and fry on a medium flame till they splutter.
  3. Now add slit Green Chillies, chopped Onions and Salt to the seasoning and fry till they turn golden brown.
  4. Add chopped Dill Leaves to the fried Onions and fry for another 2 to 3 minutes.
  5. When the raw smell from the Dill Leaves is removed, add cooked Rice, grated Coconut and increase the flame and mix well till the rice is heated properly.
  6. Before removing from the flame, add roasted Cashews and Peanuts which were kept aside along with Lemon Juice and mix properly.
  7. This is a perfect recipe for the lunch box.
