Chinese Crispy Fried Corn | Crispy Corn Recipe | How to make Crispy Corn- This is an Indo-Chinese recipe. There is also a Street Style Corn Recipe. That is spicier. I have made Crispy Corn Fried Rice too. I will share that recipe with you as well soon.

It is easy to make restaurant-style “Crispy Corn”. Just follow some tips and measurements and then the Crispy Corn will disappear in half the time it took to cook it. It is a simple starter that is so very tasty and popular.

Tips

How do they get such perfectly crunchy Corn in a restaurant?

• Corn should always be fresh. Then it can be fried crunchy in oil. Withered, dry Corn does not taste good.

• Sweet Corn is better than regular Corn for this recipe.

Can we use Fresh Corn?

• I have used Frozen Corn. You could use fresh Corn too. If you are using fresh Corn, you should carefully seed the cob, taking care not to smash the seeds.

How to ensure that Corn is properly coated?

• Corn Flour will stick properly only if it is added to the half cooked and cooled Corn.

• If the Corn Flour is added to hot Corn, there will still be water and Corn Flour is not sufficient. And too much Corn Flour turns it into fritters (Pakodi).

• If necessary, add a little water with spoons so that the Flour sticks to the Corn. But again, if there is too much water, the Flour won’t stick to the Corn and we won’t get crunchy ones.

How to cook Corn perfectly?

• Corn Should be cooked just about 80 per cent without cover on a high flame. How do you determine 80 per cent? By just biting on a seed and it is not too soft but you can feel it under your teeth.

• If the cooked Corn is dunked in cold water immediately, it will not get cooked further.

Precautions while adding Corn:

• Sometimes, Corn seeds burst when added to hot Oil. So place a sieve on the pan so that hot oil won’t spill on to you while frying.

Follow this while tossing Corn:

• Indo-Chinese Starters should always be tossed on high flame for a smoky, delicious flavor.

• This Starter is best served hot.

Ingredients

  • 150 gms Sweet Corn
  • 3 tbsps Corn Flour
  • Salt
  • 1/2 spoon Pepper Powder
  • 2 tbsp Water (For Coating)
  • 750 ml Water (to boil Corn)
  • Oil (for frying)
  • For Tossing
  • 2 tsp Oil
  • 4 Garlic Cloves (Chopped)
  • 1 tbsp Green Chillies (Chopped)
  • 1 Onion Medium Size (Chopped)
  • 1/2 tsp Pepper Powder
  • 1/2 tsp Chilli Flakes
  • Salt
  • 1/2 tsp White Pepper Powder
  • 2 tbsps Spring Onions Chopped

Instructions

  1. Boil the Sweet Corn in the pan without a lid. Cook only 80 percent and do not let them become too soft.
  2. Dunk the cooked corn immediately into cold water, leave for 2 minutes and then strain the water.
  3. In the fully strained corn, add Corn Flour, Salt, and Pepper Powder and let the seeds be fully coated.
  4. Add 1-2 tbsp water if necessary, and coat the corn, applying some pressure.
  5. Now fry them in hot oil. While frying, place a sieve on the pan so that the corn seeds don’t burst and spill hot oil.
  6. After the Corn is crisply friend, set it aside.
  7. For the tossing, heat 2 tbsp oil, add chopped Garlic, Green Chillies and Onions and fry it for 2 minutes or until the Onions lose their raw smell.
  8. Add fried Corn and toss well with Pepper Powder, Salt, White Pepper Powder, Chilli Flakes. Sprinkle chopped Spring Onion and remove it from the fire.
  9. Serve it hot.
