Tips
Chilli Garlic Noodles. Noodles:

Noodles: Use the best quality Noodles for the ultimate taste.

Noodles should always be cooked only to 80%. If they cook any more, they will become a tangled, broken mess when you toss them.

Cooking to 80% means the Noodles would be fully cooked, but if you touch them there would still be a little hardness. It should be removed from the fire at that stage. The rest will get cooked before the Noodles cool down.

After Noodles are cooked, pour a little oil over them and separate them with a fork.
Ripe Red Chillies:
- The Ripe Red Chillies we add to the Noodles make them very tasty; those who do not have ripe chillies can add more dry red chillies.
Aromatic Powder:
- I have used Aromatic Powder as a substitute for Ajinomoto. Those who cannot find it can skip it. Or use Ajinomoto if you like it.
Water:
The last 1 tbsp of water that you add to the Noodles keeps them from becoming too hard.
Tossing:
Chinese food should always be tossed on a high flame. Only then it tastes good with a smoky flavour.

Ingredients
- 250 gm Noodles
- Water – To boil
- 1 tbsp Salt
- 2 tsp Oil (To cook and to sprinkle on Noodles after cooking)

To Toss Noodles
- 3 tbsp Oil
- 3 tbsp Garlic Chopped
- 2 tbsp Chopped Ripe Red Chillies
- 2 Dry Chillies
- Small Onion Slices
- 1/2 cup Yellow Capsicum Sliced long
- 1/2 cup Red Capsicum Sliced long
- 1/2 cup Green capsicum pieces
- Salt
- 1 tsp Pepper Powder
- 1 tbsp Tomato Sauce
- 1 tsp Green Chilli Sauce
- 1 tbsp Dark Soya sauce
- 1 tsp White Pepper Powder
- 1 tsp Aromatic Powder
- 1 tsp Vinegar
- 1 tbsp Water
- 1 tbsp Chilli Flakes
- 1/4 cup Chopped Spring Onion
Instructions
- Pour water into a vessel, add Salt and Oil let the Water boil. Add the noodles to the boiling water and cook on a high flame to 80%.
- Drain the water off the cooked Noodles and spread on a plate. Sprinkle Oil and move them without breaking the Noodles and let it cool.

Heat oil in a pan and add Garlic, Ripe Red Chillies, Dry Chillies and fry.
- In the fried Garlic, add Onions, three colors of Capsicum, and toss for 2-3 minutes on a high flame so that they are cooked to 60%.
- Add the cooled Noodles to the pan and add the rest and toss on a high flame for 2-3 minutes.

Before you remove from the fire, add Vinegar, Water, and Spring Onion, toss for another minute.
- Serve it hot with Veg Manchuria or Tomato Ketchup.
