Tips

• Schezwan Veg Fried Rice must-have Star Anise Powder. That is what adds aroma and taste to the Rice.

How to keep the Rice fluffy?

• Soak a cup of Basmati Rice, that is about 185 gms, for an hour. Cook by adding a little Salt and remove water and let it cool. Then the Rice is fluffy. Remember to use quality Rice.

• If you add Rice while the water is boiling and cook on a high flame, then the Rice won't become sticky and soft. Rice should be cooked to 80% and spread on an Oil-coated plate to keep the grains separate and fluffy.

• Schezwan fried rice recipe can be done with Sona Masoori Rice too.

A few points about Schezwan Sauce:

• The spice in the Schezwan Sauce you use depends on the quality of the Chillies you use. Or the quality of a brand if you buy outside. So, always check the taste before you add it to the Rice.

Finally,

• I have used Aromatic Powder in this recipe as a substitute for Ajinomoto, and it is available online. In case it is not available, forget it. Or, if you like the taste, use Ajinomoto.

• If you sprinkle a little sugar before you take the Rice of the fire, it adds a nice balance to the taste.

• Chinese food should always be tossed on a high flame for a nice, smoky flavour.

• Vegetables should also be fried to 70 % on a high flame for a good taste.

Ingredients

  • 1 cup Fluffily cooked Basmati (185 gms)
  • 1/4 cup Oil
  • 1/4 cup Carrots grated
  • 1/4 cup Beans Chopped thin
  • 2 tbsps Spring Onions Chopped
  • 4 Red Mirchi
  • 1/4 cup Schezwan Sauce
  • Salt
  • 3/4 tbsp White Pepper Powder
  • 3/4 tsp Aromatic Powder
  • 3/4 tsp Star Anise Powder
  • 1/2 tsp Light Soya Sauce
  • 1/2 tsp Vinegar

Instructions

  1. Heat the Oil and add Dry Red Chilies, grated Carrots, Chopped Beans and fry to 70 percent on high flame.
  2. Add Schezwan Sauce and fry further.
  3. Add Salt, White Pepper Powder, Aromatic Powder, Star Anise Powder and mix well.
  4. Add the fluffy Rice and toss on a high flame.
  5. Now add light Soya Sauce and Vinegar and toss well on a high flame.
  6. Sprinkle a little Sugar and Chopped Spring Onions, toss well and remove from fire.
