Tips

Garlic

  1. The Fried Rice tastes great if the chopped Garlic is fried well but do not let the Garlic burn as the Rice becomes bitter.

Basmati Rice:

  1. I have used Basmati Rice but you could use any other rice as well.

How to make Rice fluffy:

  1. Soak Rice for 30 minutes. Add 4 cups of Water, Salt and Oil and cook to 80% on a high flame.

  2. Cooking Rce to 80% means when you break a grain, it should still be a little solid. At that stage, strain the Rice and spread it on a plate coated with Oil or in a sieve and let it cool down fully. Then you get fluffy, non-sticky Rice.

Aromatic powder :

  1. I have used Aromatic powder found in the market instead of Ajinomoto. This is a substitute for Ajinomoto. In case you like Ajinomoto, you could use it or go without it

Ingredients

  • 2 tbsps Chopped Garlic
  • 3/4 cup Basmati Rice (Cooked in a fluffy manner)
  • 2 tbsps Oil
  • 1/4 cup Thinly Chopped Carrots
  • 1/4 cup Thinly Chopped Beans
  • 2 tbsp Chopped Spring Onions
  • Salt
  • 1/2 tsp White Pepper Powder
  • 1/2 tsp Pepper Powder
  • 1/2 tsp Aromatic Powder
  • 1/2 tsp Light Soya Sauce

Instructions

  1. Add chopped Garlic to Oil and fry well, Remove from fire and set aside.
  2. Heat Oil and add chopped Beans, chopped Carrots and fry on a high flame for 3 minutes
  3. Add the fluffy Rice to the pan and the fried Garlic and toss on a high flame
  4. Add Salt, Pepper powder, Aromatic powder, White Pepper, Soya Sauce and toss well.
  5. Sprinkle the chopped Spring Onions, toss and remove from fire.
